Spaghetti squash feta pasta

Ingredients:

  • Spaghetti Squash
  • 1/2 red onion, chopped
  • 1/2 green pepper, chopped
  • 10 oz pkg grape tomatoes
  • 1 block feta cheese
  • 2 tbsp jarlic (minced garlic from a jar)
  • 1/2 tsp each mushroom powder, garlic powder, onion powder, black pepper, paprika and red pepper chili flakes
  • drizzle of olive oil
  • fresh basil garnish

Directions:

  1. Preheat oven to 420 degrees Fahrenheit
  2. Cut spaghetti squash in half, length wise, and place in a baking dish, cut side facing up
  3. Sprinkle both halves with seasonings and a drizzle of olive oil, then add the onion and tomatoes
  4. Split feta cheese block in half and place each half in the each spaghetti squash half, then over with jarlic and grape tomatoes and drizzle a little more olive oil
  5. Bake about 50 minutes or until done, it’ll be easy to tell based on how easy it is to ‘shred’ your spaghetti squash into pasta strands. If you can’t easily do it, it isn’t ready, throw that baby back in the oven
  6. Use a fork to scrap the sides and bottom of the spaghetti squash to make pasta and mix all of the ingredients together. There will be some extra liquid from the vegetables, but that’s ok, it will get mixed in and soaked up, kind of like how you add pasta water to your pasta dish
  7. Enjoy!
